Cotton Cheese Cake
这是很久以前做的生日蛋糕
Cotton Cheese Cake
Ingredients :
A) 250gm cream cheese
230ml fresh milk/UHT
B) 100gm butter
C) 6 egg yolk
1/2 tsp lemon paste
D) 20gm corn flour
50gm super fine flour
E) 6 egg white
1/4 tsp cream of tartar
140gm sugar
Method :
(1) Put A in double boiler until the cream cheese melts, turn off the flame, add butter, mix until
butter melts. Put aside for 5 minutes
(2) Sieve D. Add C into (1). Add the sieved flour into the mixture
(3) Beat E until stiff , add 1/3 of the cheese mixture into (3), use a hand whist to combine. Pour
(3) back to the cheese mixture, mix well and pour it into a mould
(4) Steam bake in preheat oven at 180 C for 40 - 50 minutes
(5) Invert the cake mould immediate after it was taken out from the oven to allow it to cool
completely
.
